The Secret to Cooking for a Crowd
Having a large family growing up, I learned to cook in a big
way. With 5 brothers and 3 sisters plus Mom and Dad, I started
out cooking for eleven people by the time I was twelve. Mom
needed help and taught her daughters to cook at an early age.
I'll never forget the first time I fried chicken all by myself.
My brothers ridiculed my over-done chicken mercilessly.
I'll never forget the first meal I cooked away from home. My
sister and I moved out together, just the two of us, and, ...

The Evolution Of Pizza
Trying to trace the history of the first pizza is a surprisingly
controversial subject. Some claim that this popular food is
based on early unleavened breads served in the early centuries
in Rome. Others trace a connection from modern pizza back to the
pita breads of Greece.
It's fairly well established that the first pizza as we know it
today was created by a man named Raffaele Esposito from Naples,
Italy. Esposito's creation was designed to honor the visit of
Queen Margherita to Naples in ...

A Chinese Surprise
Last night I enjoyed a wonderful Chinese meal ' or so I thought.
Delicious it was. Chop Suey served on rice. A fantastic mix of
chicken, beef and pork. With a perfect mix of vegetables, not
too much and yet not too little.
I even used chopsticks and managed to get most of it in the
right direction.
It was so delicious I cleaned up my entire plate and went back
for seconds. After all this I sat back in my chair fully
satisfied and happy with myself.
No Chinese meal is ever complete without ...

How to Be Creative When you are Cooking
Have you ever been in the kitchen ready to eat and realized you
don't have your favorite sauce or dip for dinner. This happened
to me recently when my family was sitting down to beer battered
Walleye from a recent fishing trip. We had no tartar sauce. So I
opened the regenerator and selected mayonnaise, sour cream,
lemon and dill pickle relish. I then mixed the four together and
sprinkled in a little fish rub from the pantry. We had instant
tartar sauce and really tasty fish.
When you are in ...

AUTUMN REFLECTIONS
By Marybeth Gregg
The calendar says it's October, but it's is still warm , which
is really confusing because not only has the Halloween 'stuff'
been in the stores, but the Christmas decorations are being

ready for those hearty one-pot dinners, and the oven being on
but my geraniums and dahlias are in full bloom. No matter - I
have been busy with lots of new recipes and cooking programs and
moving on to the ...

United States Regional Cuisine
The history of American soul food can be traced all the way back
to the days of slavery. More often times than not, the slaves
were given the most undesirable part of the meal, the leftovers
from the house. Pairing this with their own home-grown
vegetables, the first soul food dishes were invented. After the
slaves were freed, most of them were so poor that they could
only afford the most undesirable, inexpensive cuts of meat
available to them. (The leftover, unwanted parts of a pig such
as ...

Ma Po Tou Fu is Sichuan's well known characteristic dish.
Tradition has it that during the Tongzhi years of Qing Dynasty,

is pretty good at cooking. She uses bean curd, tiny sliced beef,
hot pepper, Chinese prickly ash, thick bean sauce and other
ingredients to cook. The dish tastes hemp (a unique flavor from
the Chinese prickly ash), spicy, fresh, fragrant, and it ...
